Sopaipillas w/ Wild Blackberry Honey Sauce

Sopaipillas are a traditional Mexican fried flatbread similar to Indian Fry Bread. The honey sauce uses wild blackberries, but commercial varieties are easily substituted.
Ingredients-

  • 2 cups all-pupose flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 tbsp. shortening
  • 3/4 cup water
  • Vegetable oil for frying

Sift together flour, baking powder, and salt. Cut in shortening. Add water and knead to a smooth dough. Allow the dough to rest for 30-45 minutes. Roll out to approx.1/8 in. thickness and, using a sharp knife or large round cookie cutter, cut 4"-5" rounds. (Note: Any desirable shape can be cut out, but keep in mind the shape may be lost when the bread puffs during cooking.)

Heat oil in a deep fryer or large saucepan to 350-375 deg. Fry a few at a time until golden brown and very puffy, about five minutes. Immediately place on paper towels to drain. Allow sopaipillas to cool for approx. 5-10 minutes before serving. Top with Wild Blackberry Honey Sauce(below) and (optional) serve with a scoop of vanilla ice cream. Honey Sauce

  • 1 cup honey
  • 3/4 cup fresh wild blackberries or frozen blackberries
  • 1/4 cup light corn syrup
  • 3 tbsp applesauce
  • 1 tbsp white wine
  • 1 tsp balsamic vinegar

Add blackberries,wine, and vinegar to a medium saucepan over medium heat. Gently mash blackberries with a wire whisk (The heat itself will break down the berries, let the heat do most of the work) until they are broken down to mostly liquid. Remove from heat and strain through a fine mesh strainer into a bowl. Assure no seed fragments have made their way through the strainer. Allow to cool to lukewarm.

Whisk in honey, applesauce and corn syrup until blended. Serve. (Optional-For best results cover and refrigerate overnight and warm to room temperature when ready to serve.)
