Ingredients-
Sprinkle steaks with salt and pepper (to taste). Heat a heavy cast iron skillet over high heat for 2 to 3 minutes. Add steaks to skillet and sear about 30 seconds on each side. Immediately place under oven broiler or a top a grill, cooking for approx. 7 minutes on first side, turn and cook an additional 5 minutes. (These cooking times are a guideline, based on steaks of about 1 inch thickness cooked to medium-rare). Slice steaks diagonally(bias) and drizzle slices with the poblano cream sauce. Serves 4. |
