Poblano Steak

  • 4 sirloin or tri-tip steaks
  • 2 medium poblano chile peppers, roasted, peeled, seeded and diced
  • 1 cup sour cream
  • 1/3 cup heavy(whipping) cream
  • 1 tbsp. cilantro, chopped finely
  • 1/2 tsp. salt
  • Salt and Pepper to taste
Combine poblano chiles, sour cream, heavy cream, cilantro, and 1/2 tsp. salt in a medium saucepan. Heat slowly over low heat until warm.

Sprinkle steaks with salt and pepper (to taste). Heat a heavy cast iron skillet over high heat for 2 to 3 minutes. Add steaks to skillet and sear about 30 seconds on each side. Immediately place under oven broiler or a top a grill, cooking for approx. 7 minutes on first side, turn and cook an additional 5 minutes. (These cooking times are a guideline, based on steaks of about 1 inch thickness cooked to medium-rare).

Slice steaks diagonally(bias) and drizzle slices with the poblano cream sauce. Serves 4.
